Remember the “Cha Cha Cha chia” jingle? Well, I sing/hum that every time I make anything with chia seeds. These little buggers are packed with nutrition! They come equipped with fiber, minerals, antioxidants and omega 3 fatty acids which help reduce inflammation.
Chia seed pudding is one of the easiest ways I’ve found to incorporate more chia in my diet that’s simple and sooo delicious! Check out the recipe, give it a try and as always, let me know what you think.
1/4 cup of chia seeds
1 cup of coconut milk
1 tbsp of maple syrup
1 scoop of vanilla Juice Plus+ Complete
1 tbsp of cinnamon
Add everything into a blender or Vitamix and blend until most seeds have been blended. Pour contents into a glass jar. Cover with a lid and refrigerate until desired consistency is reached. Top with your favorite fruits and nuts. Enjoy!
