Veggie Packed Cauliflower Stir-Fry

Ingredients christa 3_24
1 head of cauliflower
2 tbsp of organic coconut oil
4 cloves of garlic (minced)
1/2 red onion (chopped)
1 bunch of asparagus
1 cup of mushrooms (chopped)
2 carrots (chopped)
1 knuckle of ginger (chopped)
3 tbsp of soy sauce

*Can add chicken or shrimp for more protein

Directions
1. Wash and chop cauliflower, then add to a blender and pulse until rice like.

2. Saute coconut oil, garlic and onion until golden, then add all the ingredients. Stir occasionally until all veggies have been cooked.

3. Dish out and serve for the whole family to enjoy!
