So I’ve been loving this spirulizer that John Paul gifted me for my birthday. It’s so easy to make veggie pasta and it’s such a light and delicious quick meal! You can use zucchini, carrots, apples, potatoes, sweet potatoes, squash, etc as your noodles then add whatever kind of sauce or dressing over it for a nice meal. In today’s recipe, I used organic zucchini and topped it with fresh pesto, SOOO good! It’s a raw and nutrient dense meal full of great nutrition. Give it a try and let me know what you think!

Ingredients:
Pesto
1/3 c pine nuts
2/3 c olive oil
5 cloves of garlic
1/3 cup of nutritional yeast
1 bunch of fresh basil leaves
1 lemon (juiced)
Salt + pepper to taste

Pasta
4 organic zucchini

Recipe:
1. Wash and spiralize zucchini. Place in a big bowl.
2. Blend all pesto ingredients together until smooth then pour over pasta.
3. Plate, serve, enjoy!
